Tannour is a type of clay oven in which bread is baked in Iraq and other Arab countries. The clay oven “Tannour” industry in Najaf is considered one of the old industries that struggle to survive. Clay is extracted from the Najaf Sea, where it is mixed with reed fruits and red sand, then formed into “Tannour” the clay oven. Some people still stick to bread with a clay oven, despite the presence of the alternative. Tree wood, date kernels, or even air-pressure oil burners use oil to the stove to heat the tandoor to the temperature needed for baking.
